Flavoursome elderflowers

The summer is wonderful and one of the most beautiful effect is the blooming of the many different plants. We, the amateur chefs do like it very much as the nature offers quite a choice of natural things like elderflowers and strawberries and many things more, which are very useful for the creation of special dishes.
We are going to start here with the elder flowers. Before their blossom disappear we have to use them. No, we do not create elder syrup. This kind of delicacy we presented last year at the same time. I am composing now another speciality called “Hollerkücherl” (fried elderflowers).

Ingredients for 2 persons:

eggyolks

tbsps

vanilla sugar

60

g

sugar

pinch

salt

ml

milk

egg whites

g

sugar

g

flour

 

100

ml

cooking oil

 

etwas

icing sugar

 

Directions:

  1. Wash or shake out elderflowers.
  2. Mix eggyolks, vanilla sugar, 60 g sugar, salt and milk.
  3. Beat egg whites until stiff and add 30 g sugar, beat again.
  4. Add flour to the egg yolk-mass and fold in stiff egg whites.
  5. Heat pan. Dip elderflowers into batter, fry them und let it drain.
  6. Put elderflowers on a plate and dredge them with icing powder.
