Finally! South Tirol I’m coming!

My daughter would say “Only one night sleeping ….”
But I am just saying: “Tomorrow is the day of the days.” A day I have been waiting for the whole year. I am going to leave tomorrow with my two friends Sandra and Frauke for our annual special Wellness-recreation-weekend to South Tyrol. Our wellness-hotel is already waiting for us. I tell you it´s really necessary to have this short break from the stress of our daily life. We intend to go walking (of course I am not really professional in that respect but it will work as my friends are absolutely freaks in that discipline), go swimming, relaxing, enjoy the marvellous food, talking and have a long sleep till the sun starts to get impatient.
And all this for three days. Who does not like to get pampered in a way like this?
But before we start I am going to present you a wonderful Hefezopf with icing.
It’s normal that a pastry cook is the  professional creator for such a wonderful cake but it’s not that difficult to make it yourself. A warm Hefezopf with sugar icing and a wonderful smelling cup of coffee or for breakfast a home made Hefezopf with butter and jam – that can be the dream of a real bon vivant.

Ingredients:

500

g

flour

1

packet

dry yeast

1/8

l

milk

½

tsp

salt

100

g

butter

1-2

eggs

80

g

sugar

some

ground

lemon zest

some

vanilla flavouring

80-100

g

sultanas

Eier

Icing:

Some

icing sugar

a little bit

water

Directions:

    1. Place the flour in a large bowl and distrubute dry yeast over it. Add lukewarm milk and stir until dough is smooth.

    2. Slowly add the rest of lukewarm milk, softened butter, sugar, eggs, salt, vanilla flavouring and lemon zest. Beat with electric mixer (kneading attachments) until dough pulls away from the bowl. Or knead until dough is smooth. Cover with a wet towel and let rest until double in size (about 30-45 min).

    3. Place sultanas in a small bowl and pour hot water over it. Dry and sprinkle it with flour.

    4. Kneat dough again, add sultanas and let it rest another 30 min.

    5. Punch down dough and on floured surface, separate dough into 3 balls and form 3 long ropes. Braid the 3 together into one long braid. Let it rest for about 15 min.

    6. Bake at 180-200°C for 45 min or until golden brown.

    7. Mix icing sugar and just a little bit of water until creamy and ice the Hefezopf.
