Homemade Applepurée with Ginger

Ingredients

  Juice of one lemmon
8 lbs peeled, cored and quartered apples (cooking apples)
200-500 g sugar (sweet apples need only 200g, sour apples need more - taste it!)
1-2 inches ginger
each glass gets two 1-2 inches vanilla bean
2-3 cups water
   

 

Directions

  1. Peel, core and quater the apples.
  2. Put all ingredients into a large pot. Cover it and bring it to boil. Lower heat and simmer for 30-40 minutes.
  3. Remove from heat.
  4. Fill the glasses and put in each glass 1-2 inches vanilla bean.
