Asparagus-Strawberry-Salad

Spargelsalat

 

For two persons:

Ingredients

500 g fresg green asparaguses
300 g strawberries
100 - 125 g baby spinach leaves
8 pieces of walnuts
1 tbsp butter
a pinch of salt
   
Ingredients for the dressing  
  juice of one lemon
6 tbsp olive oil
a pinch of pepper
a pinch of sugar
possibly 2 tsp red pepper berries

 

Directions

  1. Wash asparagous and cut into thirds.
  2. Trim the tough ends from the asparagus.
  3. Boil water, add salt and butter and cook the asparagus pieces for nine minutes. Drain them in a colander and set aside until completely cooled.
  4. Wash spinach leaves and cut off some of the stems. Put the leaves on a large platter.
  5. Wash strawberries, cut them into quarters and put them on the platter, too. Add aspargus-pieces and walnuts.
  6. Mix lemon juice, sugar, salt and pepper. Add olive oil. Mix it again. Crush pepper berries and add them. Spoon sauce over salad.

Tipp:        Alternatively, you can use white asparagus.
