Bavarian Soft Pretzels

 

Ingredients

 

a 42g block of

1 package of

fresh yeast or

dry yeast

300 ml lukewarm water
1/2 tsp sugar
500 g wheat flour
1 tsp salt
   
1 l water
10 g natron (for caustic soda)
1-2 tbsp coarse salt for sprinkeling
Pretzels

 

Zubereitung

  1. Dissolve fresh yeast in warm water and sugar.
  2. Sieve flour into a bowl (If you use dry yeast, then sprinkle yeast over sieved wheat flour!) and add and mix the ingredients and kneat until smooth.
  3. Place dough on floured surface.
  4. Roll dough into a rope. Cut into 12 equal pieces (about 40-45 cm length).
  5. Twist into a pretzel shape.
  6. Cover pretzels with a towel and let them rise for about 10 min in a warm spot.
  7. Preheat oven to 225 °C.
  8. Cook water and natron in a large pot until it boils .
  9. Add the pretzels to the boiling water for 30 sec.
  10. Remove and place on baking paper on a baking sheet.
  11. Sprinkle with coarse salt and put them into a fridge for about 30 min (important!!!).
  12. Bake pretzels for 20 min.
