Green Thai Chicken Curry
Prep time : about 40 - 60 min

Ingredients

1 onion, chopped
1 tbsp vegetable oil
1-2 tbsp green curry paste (according to taste)
375 ml coconut milk
125 ml water
500 g chicken legs (or: chicken or turkey breast fillets), chopped
100 g green beans
6 kaffir lime leaves, torn into pieces
1 tbsp fish sauce
1 tbsp lime juice
1 tsp lime zest, grated
2 tsp soft brown sugar
5-10 g coriander leaves
   

 

Directions

  1. Heat the oil in a wok or large frying pan. Add the green curry paste and the onion and cook over a fairly high heat for about a minute.
  2. Add the coconut milk and the water and bring to a simmer.
  3. Add and stir in thebeans and lime leaves, chicken pieces or zest until coated in the paste. Bring to a simmer, cooking for 25-30 minutes until thickened slightly.
  4. Stir in the fish sauce, grated lime zest, lime juice and brown sugar.
  5. Garnish the coriander leaves on it and serve it with hot rice.

Tipp:         Do not cook your fillets too long. Otherwise they will dry out!
